This is a simple recipe for a delicious breakfast treat, or as the eponymous name implies, a perfect complement to coffee. This recipe was from my Mother and goes back so far, I couldn’t tell you from whence it came. It is my go to crowd pleaser for special occasion brunches.
Double this recipe for a 9 x 12 pan.
Cake Pre-heat oven to 325
- 1 1/2 cups of flour
- 1 tbs baking powder
- 1/2 cup sugar
- 2 eggs, beaten
- 6 tbs butter softened
- 1/2 cup of milk
- 1/2 tsp vanilla
- 2 medium apples, cored, peeled and sliced.
Streusel Cinnamon Topping
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2/3 cup all-purpose flour
- 1 teaspoon ground cinnamon
Sift flour and baking powder together. Add sugar, eggs, butter and milk and vanilla and beat on medium with a hand mixer. Beat until well incorporated. Pour half the mixture into a greased and floured, 9 x 9 pan. Stick sliced apple wedges in the mixture and top with the remaining batter.
Bake about 20-25 minutes or until a cake tester comes our clean.
