Cinnamon Apple Coffee Cake

This is a simple recipe for a delicious breakfast treat, or as the eponymous name implies, a perfect complement to coffee. This recipe was from my Mother and goes back so far, I couldn’t tell you from whence it came. It is my go to crowd pleaser for special occasion brunches.

Double this recipe for a 9 x 12 pan.

Cake                                                                                                Pre-heat oven to 325

  1. 1 1/2 cups of flour
  2. 1 tbs baking powder
  3. 1/2 cup sugar
  4. 2 eggs, beaten
  5. 6 tbs butter softened
  6. 1/2 cup of milk
  7. 1/2 tsp vanilla
  8. 2 medium apples, cored, peeled and sliced.

Streusel Cinnamon Topping

  1. 1/2 cup butter, softened
  2. 1/2 cup granulated sugar
  3. 1/2 cup packed light brown sugar
  4. 2/3 cup all-purpose flour
  5. 1 teaspoon ground cinnamon

Sift flour and baking powder together. Add sugar, eggs, butter and milk and vanilla and beat on medium with a hand mixer. Beat until well incorporated. Pour half the mixture into a greased and floured, 9 x 9 pan. Stick sliced apple wedges in the mixture and top with the remaining batter.

In a medium bowl, cut butter with a pastry cutter into small pieces, add sugar, brown sugar, flour and cinnamon until well combined. Sprinkle the mixture on top of the cake.
